The lead-free glaze prevents flavors from being absorbed into the crock and transferred to or contaminating other stored items.

The vegetables or fruit being fermented should be submerged in a brine or juice, with a depth of approximately 4-6 cm (1 1/2" to 2 1/2"). If there is insufficient liquid to cover the contents, a brine of saltwater in a predetermined concentration (as outlined in the recipes) can be prepared by boiling and cooling the vegetable juice. Linen cloths, traditionally used to cover the fermented items, are not necessary as long as the crock and lid are kept clean. Lining the crock with large cabbage, grape, or horseradish leaves is sufficient.

The vegetables used should be of high quality, with all damaged, bruised, brown, or black parts removed. Stems should be removed, leaving only the best parts of the vegetable. Thorough washing is essential. For sauerkraut, a Cabbage Cutter can be used to make clean and uniform slices, which is an important step.
